Taste Bud Tuesday

ChorizoBurrito          If you follow along with me on Instagram, you know that I do not like to cook.  So when I can make something easy and tasty, you know it’s going to become a part of my dinner menu rotation!  Today I’m adding to the Taste Bud Tuesday series, because sometimes you just crave a good Chorizo Burrito!!

Today’s Dish: Easy Chorizo Burrito

Chorizo (we use Soy Chorizo from Trader Joe’s)
Onion (diced)
4-5 Eggs
Tator Tots
Flour Tortillas
Sour Cream (optional)
Mexican Blend/Cheddar Cheese

Bake Tator Tots

Sauté onions

Remove chorizo from casing

Cook chorizo with sautéed onions

Scramble egg, add to chorizo and onions

Toast/warm tortillas and spread with sour cream, guacamole, salsa, or whichever you prefer.  Then add chorizo mix, tator tots, and cheese.

Enjoy for breakfast, lunch, or dinner!!

Taste Bud Tuesday

ChickenPilaf

This recipe came to me from a dear friend who knew I would appreciate the simplicity of a quick and easy meal.  It’s one of those recipes that you can pull out at the last moment, because in most cases you can use what you already have to substitute some of the ingredients if needed!

Today’s Dish: Chicken and Pilaf

Rice Pilaf (Garlic & Herb)
2 Cups of Water
1 Can of Cream of Mushroom Soup
Frozen/Slightly Thawed Chicken tenderloins or thighs

Preheat oven to 375 degrees

Layer each item in the following order in a 9×13 baking dish uncovered.

ChickenPilaf1Uncooked rice and seasoning on the bottom (make sure it is evenly spread in the dish)

AddChickenFrozen/Slightly Thawed Chicken tenderloins or thighs

AddCreamMushSoup1 Can of Cream of Mushroom Soup

AddWater2 Cups of Water

Bake375HourBake in oven at 375 degrees for 1 hour.

Serve with a salad and you are set!

TatorTotSurpriseIngredientsFrom time to time I’ll post a family favorite recipe.  Cooking is definitely not my forte, so I am thankful that my family is gracious to enjoy the simplest of meals.  I prefer to plan our weekly dinner menu in advance, to help with our daily schedule and routines.  Not to mention, a planned menu will assist me in keeping within our grocery budget.  Today’s dish: Tator Tot Surprise

I received this recipe over 9 years ago in a recipe exchange through a moms’ playgroup at our church.  I was eager to try this dish because it consisted of less than 5 ingredients and took less than 20 minutes to prepare.

Tator Tot Surprise

1 lb. Uncooked Ground Beef

1 packet French Onion Soup Mix

1 can Cream of Mushroom or Cream of Celery Soup

Tator Tots

Preheat oven to 375 degrees

Layer each item in the above order in an 8×8 backing dish uncovered.  Bake at 375 degrees for 1 hour.

TatorTotSurpriseYou can change this recipe by adding cheese, corn, etc.  Make it your own and get creative.  Serve with a salad and you are all set!
